If you donot want any manual intervention in items to be copied when a sales order is created automatically from another sales order, you can try putting the code in copy control routine at item level. Put the code in the routine that if item catg is not equal to XXX. So system will copy all item catg except XXX.
Go to VA01, give order type and sales area and click on "Create with Reference". There input the quotation reference and click on "Item selection" at the bottom screen. Now you can choose any line item which you want to copy from quotation.
