Where in Customising can I find that some fields in the sales order which are hidden can be enabled.

Check user-exit "USEREXIT_FIELD_MODIFICATION" in program MV45AFZZ which is used to control the field setting at sales order level.

I do not think there is any option in Customising inorder make changes to an existing field in the sales order.
For example let us assume that a field, "Customer group" is in editable (changeable) mode in sales order. The settings for this field can be altered so that it is made to appear in "Display mode" which will not allow the value in that particular field to be changed during sales order processing. To my knowledge, this functionality is possible in ABAP through Screen Painter option (Transaction code - SE51).
Please take the help of aTechnical consultant (ABAP) in this case.
