I am not a basis expert but in our implementations, whenever our basis had to do a kernel upgrade or a LCA build upgrade, they used to take the system down. Not all the systems but just the relevant box, development or quality or production. Our basis used to do the upgrade in development first, if they were successful they used to apply for QA and production. I remember none of them took more than some 10-20 minutes.
Again, I am not sure what to do but that was my experience. May be it's a good idea posting this question in the db and livecache forum in sdn.
