I don't think that text colour of labels can be changed in WebDynpro, at least as far as SP14 it can't (to the best of my knowledge).
You do have access to the 'cellBackgroundDesign' property, but as the name suggests that affects only the labels' background colour. Your options even there are limited.
Perhaps with themes you can control things like text colour but I've never looked into that personaly. Have a look at themes if it's important enough.

TextViews have a 'semanticColor' property, again your options are limited to a few possibilities but perhaps one will suit your requirements.
