Hi,
you use party when you need to change some header values
of you XI message (often when you do business to business communication)
if you don't need to change anything you can use a serivce without party
also in case of some IDOC scenarios you can
use service with party have a look at this blog:

What is the use of Party & Service with out party?
Simply:
Party : The sender system is not local It is used for B2B scenarios.
Service without party : We use this when the sender is the same system.It is used for A2A scenarios
Party
Party is used to represent a Business Partner (doesnt belong to the current landscape) which is defined in B2B Scenarios.So All the systems/services accociated with the Party are referred only as Services.
Services with and Without Party
You can assign a service to a communication party or define it as a Service without Party. Services that are assigned to a communication party are displayed in the navigation area of the Integration Builder under Party in the subtree of the party. Services that are not assigned to a communication party are displayed in the subtree as Services Without Party.

Service without party is mainly used for A2A communication.

Service with party e.g:
A2A is application to application. When two applications in a company communicates with each other we call it an A2A scenario and if its across Companies we call it B2B or buisness to buisness.
Consider an Car Manufacturing Company, it may use XI for integrating its ERP system with say an HR system and so on. As both systems are in the same landscape, it becomes an A2A.
Likewise, the Company might have transactions with say a Glass Manufacturing Unit or organization . When XI is used to Integrate these systems, it becomes a B2B as you use it to integrate 2 different Businesses in different landscapes.

Party:A communication party represents a larger unit, which is involved in a cross-system process, for example a company. We can assign each communication party one or more services and address these services as the sender or receiver of messages.
Service without party:
1.we go for service without party when we are having A2A communication.
A2A means application to application communication, it is used when two systems in same landscape try to communicate with each other. Systems in same landscape means both the systems are belongs to same organization or a company.
Normally in A2A communication sender and receiver is inside one organization and developer have freedom to define communication rules .

B2B means Business to Business communication .It is used when there is exchange of information between two different Parties or companies or landscape.
When two applications in different companies communicates with each other we call it B2B Communication.
in case of B2B every party has it own rules which must be followed if we want to communicate between different organization.

If the Integration between two products it is Service with party if not service with out party.
Which means If A2A --Application to Application with in one land scape is called Serviece with out party.
B2B means Wich is some thing across two different Land scapes is treated as Service with Party.

Let's discuss what is A2A and B2B:
A2A: Application to Application,Here the Integration is done with in the same landscape with in the same company.
B2B: Business to Business,Here the integration is done one business partner to another business partner.
Business partner A is Landscape is different and Business Partner B landscape is different..In such a situation you want to communication for Business Partner A to Business Partner B ..is called Business 2 Business.
