I was wondering if theres an easy quick way to recreate the trusted system in SMSY after a system refresh or should I create the recreate the trusted system manually?

recreating manually is in my opinion the only solution.
you can:
- recreate the RFCs again starting from SolMan
- only recreate SolMan as a trusted system in your satellite system
