As far as I know there are no CRM security specific courses. One place of info is the SAP Marketplace - where there are SAP Security Guides and ones that are specific for CRM.
ADM940 teaches you the basics and for HR there's an HR specific course, I believe it's HR940 (not sure here). I do not know of any CRM specific securoty training.
