We have to provide <Recorset>.fieldSeparator = II in Content Conversion parameters of the communication channel.

You can use the Direct Symbol in FCC itself
Like -

Why are you using 2 pipe symbols for field seperator. Just use one.
Define the Recordstructure name first then use the below
Name: fieldname.fieldSeperator
Value: |

u can use any separator like:, # etc.

You can use the pipieline sign i.e. || itself for FCC parameter.
Eg:- <field>.fieldSeparator - ||
It will work.
