If you wish to use the standard SAP roles best copy them to your own namespace. That will allow you to adjust them to your needs without risking your changes to be overwritten during upgrades etc.
I do not know what you mean by "the entire sap standard roles for each consultant". Ik think you should ask these consultants what they think they need. Even better, sit with them when selecting the appropriate roles.
