Order types, why do we need to create our order types and not use the standard ones during implementation.

Usually the standard is copied to satisfy the business requirements and to make the order type act as per the business needs.

Well there is no hard and fast rule that you have to copy nad create a new order type. Its just to meet our own requirements that we copy the standard and make the changes if required to meet our business needs.
And by this way we keep unchanged the standard order type for further use.
If you are sure that the standard order type satisfies your need you can directly use that only.
I hope this clarifies the issue.

I feel It is always better to copy the standard document types and proceed further. The main reason for this is today may be the standard would address your process with some little fine tuning in IMG setting. But assuming at a later date, if there is going to be some major changes from clients' point of view, which needs configuration changes and if you want to compare the standard, you will not be able to compare.
In fact, when you make changes in standard, system will throw a caution message not to change. So if you ask me, it would always be better to copy the standard and use a zee type.

there is no need to create new order types in implementation or support or wherever unless and as long as standard document type serves the purpose. there is no disturbance of safety threat if you use a standard document unless you want to change it. In such cases, ie a requirement driven by business which cannot be met as it is with the existing document types we copy the standard ones and make the necessary customizing settings. Like for example we have a credit card process where a new order type was required as it had different validations and inputs required compared to a standard order. we copied the standard and applied the required user exits and modified some fields at VOV8.

basically there are many factors which need customization, so a new order type would enable those customization rather than the standard type.
like there are many reports which need special customization by either adding or removing standard fields.
apart from that the order type layout might also be differing according to the business requirement.
so for all these reasons it is better to customize the order type by copying the standard and customizing on it as per the business requriements.

It depends on the clients business needs. Some times they will use some other names or different kind of busienss scenarios in order processing, that time they may require another order type.
Ex: In one case, the company gives another product instead of the one the customer ordered, in that case the client said to cofigure another order type to process the same by the name exchange order. We can achieve the same by material determination, but the client requuired another order type for that kind of sales.

It is not mandatory to create Z order type, you can use the standard also. It depends upon the Customer requirement and when the same order types is shared by different company codes, than decision may be taken accordinly to create Z order types.
