Why does SAP instruct to execute saprot.sh as 'root' on UNIX?
Even though the permissions of the file is -rwxr-xr-x

Why does SAP instruct to execute saproot.sh as 'root'? What would happen if I execute it as <sid>adm?

Did you read the saproot.sh script?
SAP instruct you to run the script after kernel upgrades etc. to set the correct permissions of some of the kernel files etc.
