Hello,
When creating a Sales Order, the plant is getting determined from 3 ways:
1. From Customer Material Information Record if it is maintained for the particular Customer and Material (VD51)
2. From Customer Master Data (XD01 or VD01)
3. From Materail Master Data (MM01).
There is no customizing maintained for the above as all the three are Master Data.

hi
plant determination in sap happens throught four level.
1. Customer material info record (CMIR)
2. Customer master
3. material master
4. User exits.
All are maintained in the CMIR info record or Customer master or material master or through logic in user exits. At some level it is defined and is determined in sales order at item level.
hope this helps. reward accordingly
kidn regards
