I have found out that even you remove disp+work completely, EP7 still operates normally.
Please explain why it is like that?

From where have you found out about this? Disp+work is one of the kernel file which tells about kernel and patches. Unless and untill you delete whole kernel directory, then you can say it may crash your SAP apps..
