If our customer gives an order and later changes his mind, how can we cancel the sales order without deleting?

you can simply put a reason for rejection and save the order.

we can only block the order from delivering. For blocking,pl make setting in sales order doc and while creating sale order go to shipping and give delivery block reason

Hi,
You can set a 'reason for rejection'.
Go to change mode of order VA02 --> go to --> Header , set an appropriate reason for rejection and reject the item. So the order will get completed.
