Value Mapping:

It is used to represent an object to have different representations, depending on the context in which it is used

Lets have a example if you have a source field country which can have country name but in target you want to have codes for these countries. for example for Australia in source you want AUS at target . Similarly India should be IND, Germany as GER. For supporting this type of look up you can use <b>Value Mapping</b>.
