Its good that you have a Project experience, Market is hot for SAP PLM rather than entering into any general SAP Modules like PP/MM/SD/QM etc as you have already started learning SAP PS which is a first step for SAP PLM.
You can even go through Cprojects, CFolders, xRPM along with Costing knowledge as this skill sets are very rare in market and more demandable. And if you are more interested then you can take a certification even, the course contents are given below.

More important than the technical settings, learn what type of projects and issues your clients will experience. Your engineering background should really help.
Most projects will fall in 1 of 3 categories: Expense (R&D, Marketing, etc); Capital (small to large projects); and Revenue (Make-to-Order, Engineer-to-Order, etc). Focus on learning the configuration unique to each.
For example:
- Expense: learn WBS element structure, plans, budgets, settlement, reports
- Capital: learn all the expense configuration, plus network structures and settlement. Learn earned value, scheduling, planning board for your clients with advanced project management maturity level.
- Revenue: learn all expense and capital configuration plus results analysis.
Finally, learn how to best integrate with 3rd party applications like MS Project, Primavera.
