Is there any log formed where I can see exactly what has changed in the profile of the user, like if some authorizations are deleted for particular user, I want to see the log of all these things.

SUIM is one option as karandikar said apart from this try this as well.
Go to SU01-> type user name and in the menu go to Information-> Change documents for Role Assignments or changedocuments for Users.

You can trace the changes in authorization profile using the Tcode: S_BCE_68001440
Or
Tcode: SUIM -> Change Documents to track the changes made in User Master / Profiles.
