Does anyone know how to get the history of changes

( WF in particular ) of a p.o in SRM environement ?

in which table is this information stored ?

You can use Function Module BBP_PD_PO_GETDETAIL to retrieve PO related data.

You can use SWI6 to search for workitems for all of the guids of a p.o.

But then again you can also search for the status in the web application of that purchase order and check the history there.
