RWB - exchange profile changes

Is there a log to see what changes were made to the exchange profile or the RWB?

have a look

For Exchange profile:

Open you XI Home Page. Click on Adminstration. Now, in the wondow that open you will be able to see the Excahnge Profile link on the left

For RWB:

you can see the audit logs in message monitoring also

if you mean to say the details of the message processed, you can see the same in the message monitoring-> ur message-> details

for the communication channel, you can see it in the component monitoring
