Field or Tab level access for users in Product master

How can I restrict access to certain fields or tabs for users in Product Master

You can always set display profile for Product Master and attach them to the user ID. Go to the Product Location master screen and on the menu/screen go to Display profile and check out.

But in that you can hide the whole tab (for eg atp) but can I possibly hide certain fields or tabs within ATP page

Yes, what I suggested was for Tab level access for users in Product Master. For field level access you have to explore PFCG transaction. I am sure there should be lots of options there.

I have been able to make the whole product master in display mode through authorization object C_APO_PROD but not to the field level access.

Maybe this is not correct, however did you also investigate S_FIELDSEL authorization object?
