Hi you have asked a broad question here...

Maybe check into help.sap.com to get into the details of what various applications can do...

As for the organizational structure, it is a cross application. Check <a href="http://help.sap.com/saphelp_nw70/helpdata/en/3c/c1366ac68411d2b499006094b9c9b4/frameset.htm">Organization Management</a>. For technical development in ABAP, the reports section in the link may just give you some clue on how to start.
