If I want know who created a Sales Document, where should i go and refer

In Sales Order (VA02 / VA03) --> Goto (on topmost line) --> select Header --> Sales (Here you can see <b>Created By</b>)

You can go to the sales document in VA03and find the field Created by in Header----Sales Menu in the sales tab of the document. The same logic applies for billing document also
If for multiple documents, you can straight away go to SE16, in VBAK table and give sales document numbers and fetch the field VBAK-ERNAM. This will give you the user id which created the document.
You can also find out the change history by going to the menu Environment----Changes . In the resultant screen you can give the item number and find the change logs.
It gives you change logs at Header level, item level and at sch line level too. You can sort the change log either using user id, or date or item etc.
The tables used for finding the change logs are CDHDR and CDPOS
