Does anybody know ,in transaction SM50, what is the different between
process->cancel with core &
process->cancel without core ?

A core file is a dump of the process's in core memory. It is used for debugging programs. You will never be debugging SAP's disp+work executable, you may however upload it for OSS if you are having issues.
That describes cancel with core, cancel without core simpley terminates the process and the dispatcher process will restart a new one.
The core files are in your work directory. You may be able to view the files via st11.
