We have using solemn 7.1 and already configured services desk part
But I have create one more user for service desk so that user can
logged the call via service desk please tell us what is processor

So you mean to say you had already configured the dispatcher which will work as service desk and assign the tickets to corresponding teams.
As the name suggests, processor is the consultant who will actually work on the incident or service request.
Usually your service desk will assign the ticket to support team who is responsible for same however support team will assign to one of its team member as processor of the ticket.
I hope it clarifies your doubt.
