I hope someone with expertise in Parallel system copy can help me with this concern
A customer has a ERP Non-Unicode System and due DB Size (+5TB) we are using parallel processing to reduce downtime.
Since after copying from Server 1 (NUC) to Server 2 (UC), all interfases and communications would stop working since the UC System would be running on a different server as the NUC System
What would be your suggestion or best practice to perform after SAP System has been copied to Server 2 (UC)
Would you execute a System Rename with SWPM in order to rename instance back to the original hostname?
Mind that OS is Windows 2012/SQL Server 2012

I was able to achieve this before on Windows. The SID was the same throughout the process. After the parallel export/import the hostname of the target server was renamed and we had to modify the profiles and entries with the old hostname (the required one). Also the services had to be re-created but these are not so painful.
