Hi Alberto ,
You can create three different DWS.
One is for Monday.
Another is from Tuesday to Friday and last one for Weekend.
On the Monday dws start time would be 00:30 am to 6:00 am.
On the Tuesday to Friday start time would 23:30 pm to 6:00 am
On the Weekend design another dws with no planned working time.

yes. You are correct. But I think you can do in this way that in the 1st dws which is for Monday ,on that dws give a tolerance of from 23:30 to 00:30.
So if employee punch in on 00:30 then system automatically take it as 23:30 while time evaluation run
Now you please tell me there have any concept regarding late coming after 00:30 , total working hours calculation etc. If these are there then you have to consider further some custom pcr to evaluate the starting hours only on Monday base.

I believe standard SAP functionality of DWS does not allow 2 shifts on the same day. You may need to use user code in the function P2011 for validation of times and creation of pairs.
Else change the night shift as 12:00 to 6:30
