I think you're right, it should be UD date + inspection interval = new next inspection date. Couple things to check in addition to what mentioned...
1. Check the material change history - was the inspection interval 30 days when the lot was created / UD done?
2. Check to see if there is some custom logic in exit QEVA0003 (EXIT_SAPMQEVA_003)

Please can you suggest any reason for Total Shelf Life and Min Remaining Shelf Life both are 0?
Below are some inputs for your Date Calculation:
Logic for SLED (Shelf Life Expiry Date) => MFG Date/GR Date + Total Shelf Life (= 0 D)
Logic for NID (Next Inspection Date) => MFG Date/GR Date + Inspection Duration (= 30 D) - I think this date will be updated during UD.
For your case, I think SLED < NID, so it really can't find the correct next inspection date. Hence is the problem. Please can you try maintaining total Shelf Life (D) in Material Master, and check if it's working.
You can expect some further good explanation/feedback on this issue form experts, who have worked in such scenarios before. That will also help to clarify this understanding.
