We are currently running the SAP ECC-6 with EHP-4. We have decided to upgrade to SAP ECC-6 with EHP-6. Which version of SAP PI (Process Integration) best suits to what we are intending to do?

As per my experience in BASIS.. SAP PI 7.1 is most stabilized one for ECC6 EHP6.
The same we are using from our implementation time and its working well.

Its all based on what requirments you have.
I would suggest go with the latest Version PO 7.4 SP 12
If there are scenarios that needs to be done with CCBPM go with PI 7.4 SP 12

Curious to to know what 7.4 SP12 has got to do with ccBPM?
In general, it's observed that customer's would always install/upgrade the systems to n-1 SP.
And as per PAM, I see that 7.4 SP 12 was released very recently i.e. on Aug 17th 2015(3 days ago)
In addition, the reason i suggested to have >=7.31 is that, AFAIK EHP6 for ECC6 contains SAP BASIS 7.31 and as per the SAP recommendation your PI version should also be >=7.31.
Ideally the highest PI version.
You can go with the PI version 7.4 SP12.

SAP recommends(it's a prerequisite that) middleware(PI) must be on the higher release than any other system in the landscape.
So i believe, your PI installation must be >= 7.31
