I am having a hard time explaining how they can recover the HANA appliance should the hardware fail. The concept of bare metal backup and recovery for HANA - is it documented anywhere.
One of my clients will not be able to get a sign off to go production if this is not answered.
Dear Wai,
Please ask the customer to read the document SAP HANA Backup/Recovery Overview | SCN .
SAP HANA is a full ACID complaint database. Please watch video : SAP HANA Academy - ACID Compliant databases - YouTube

Hi Lee,
Check the SAP KBA 1642148 FAQ hana backup recovery . You can show this as a proof.
Also you can perform the below
1. Take the manual backup
2. Move it to a different location
3. Stop the HANA Hardware
4. Perform the recovery using the backup taken at point 1.
In this way you can show the proofs to client for sign off.

Pavan Gunda

The Administration guide explains how to recover the SAP HANA step by step.
A prerequisite is that the OS installed and the backup files are available/that the backup tools are properly setup.
Also, the SAP HANA software needs to be installed to get the recovery running.
Since there are many possible setups and configurations for a SAP HANA instance, this part of the bare-metal recovery has to be aligned and documented based on your specific installation.
