please follow the menu path for Item categories and groups.

IMG->S&D->SALES->SALES DOCUMENTS->DEFINE ITEM CATEGORIES/ITEM CATEGORY GROUPS.

what do u mean by various field in item cat configuration?

if u wanna know abt the fields in item cat then press F1 on the field for notes.
