NW BPM has some mapping functionality built in to it, it is quite limited though. If you need to have more enhanced mapping features, then doing it in PI's operation mapping is the way to go.
If you do it that way, you will need to import the WSDL of the operation mapping. There are a few articles that cover this approach.
