Of course one should not forget basics:
- adjust your billable item class in CI by adding your customer fields definition into definition of billable item class.
If your system is in production, you already have some BIT's populated in BIT tables, it will be little bit tricky to adjust but not impossible.

with BAdI CRM_FICA_OO_INTEGRATION you can influence the mapping before the one off is sent to CI.
But the product id should already be part of the one off so it should be possible to get the description from the master data in ERP.

If you need to deal with fields not being part of the standard structure, you may append them to the transport structure CRMT_FICA_ONEOFF_GEN_ATTR.
Regarding the product: as Carsten mentioned they are already in (PRODUCT_ID and PRODUCT_ID_LONG - both should be filled).
Of course you have the prerequisite that they are replicated into material master of ERP (as it is about hardware/one time items that are not pushed into the FI-CA product master). Nevertheless I think it is fair approach to add the description already on the CRM side if you need it. This would save you from re-reading again in ERP.
