If the SAP is on Linux and the file system where we want to save attachments is a Windows, is mandatory to use open text or SAP Content Server?

Opentext and SAP content servers are separate servers. Communication is done via HTTP. So the SAP operating system has nothing to do with the OS of the archiving system. Both Opentext and SAP content server are available for windows.
