All products from the UI logging family provide a wide coverage regarding their logging features. We actually have not received comments on what could be called a clear restriction - missing or nice-to-have functionality of course is sometimes requested and we keep working on further improving and enriching the UI logging solutions.
To answer the second part of your question: yes, also custom built UIs can be logged. In other words, it does not matter whether it is SAP standard software, a custom or partner solution or modifiction - UI logging would support all of these.
