There's a ERMS service called UT_WORKITEM that is manipulated through class CL_CRM_ERMS_WORKITEM_TEXT that is responsible to apply that order when a inbound email (workitem) is process through ERMS.
You can make a copy of both to Z-ones, change the logic and assign it to your ERMS profile, but I've never tried it, so I don't know if there will be other places in CRM that are expecting to receive the workitem text in that order.
But I guess this will at least give you a starting point!

Hi Dora,
Since it's WF-BATCH user that will process the ERMS, just put a external breakpoint on his behalf (you might have to change it's user settings to be a dialog user). Then just send an email to the system and when ERMS starts processing the email, you should get a new debug session for that.
