In standard system, deliveries can be deleted permanently, meaning that you can't get them back unfortunately. Is it outbound or inbound delivery?
If it's outbound based on sales order, you can deliver that sales order again and set quantities on the delivery according to customer needs.
If it is an inbound delivery you can create a new delivery based on purchase order, wait for the goods to arrive and then do a goods receipt for the quantities that arrived.
