It is possible make notes about changes in a sales order?

When any field at sales order is changed a comment can be done ( written by a user ) about this, for exemple, at menu environment/modification ?

I assume you are talking about the below if so you can goto environment change log of the sales order.

If not please explain with example so that it would be easy to understand better.

Yes, It's the screen.

So, could I open a field and write a commentary explaining  why 'Request delivery date changed' at the moment when I am saving the document?

In those standard table you can't maintian. However, you can very well maintain those change notes in the below mentioned place.

Hello,

I don't know if there is a particular parameter for it but you can add notes on header part of your order and save it there. Unfortunately, there is no real link with your modification...
