Several reasons for this:
The user defined in the universe connection does not have select privileges on the table
The table name is spelt wrong (e.g. when building a derived table)
The schema name needs to be stated explicitly when identifying the table.
The table/view has been removed or renamed - check with your dba.

Hi David,
When you got this error message : refresh universe struture, create a webi document, refresh a crystal report, in IDT, in designer, etc?
Did you check that the table exists in data base according to shema used on the connection?
