what exactly payload mean?

The payload is the actual contents (business data) of a message in the Exchange Infrastructure

Hello Kodalivenu,
the payload contains the real content of messages. In header you see metadata such as error and hops of the message.
For example if you make a select of a database table you will see the data which this statement returns in payload.

The data sent by the sender system is called payload with in SOAP message in XI.
