I already read about system copy to upgrade from Windows 2003 / SQL Server 2005 to Windows 2008R2 with SQL Server 2008R2
Also, I´ve read that I can make an "in-place Upgrade" , first do an In place upgrade to Windows 2008 R2 and then Upgrade to SQL Server 2008
But I have this questions.
1.- Whether I use "system Copy" method, Do I have to change my SAP GUI clients to new Server?
2.- Does the SID change or its the same as original?
3.- I have DEV, QA, and PRD, Which should be the first system I have to upgrade?
4.- After system copy on the source, should I shutdown the server?
Because you are an experimented community, I really apreciate your comments

thas was in a sandbox enviroment
now, with the real LandScape should I start with DEV?

SAP does not support In Place upgrade. You would like to check SAP note 1476239.
This is not completely true. There are certain exceptions.
With certain restrictions, you can also perform a Windows "in-place upgrade" of an already installed SAP system without having to perform a system copy. With this in-place upgrade, you can directly migrate an SAP system from x64 Windows Server 2003 Standard or Enterprise Edition to Windows Server 2008 (R2), or from x64 Windows Server 2008 to Windows Server 2008 R2. You can keep the same SID
You need to start with the DEV system, then the QUA and finally the PRD
