Is there a spreadsheet that shows the differences in DB2 versions? I find single release differences but nothing comparing all the differences.

I don't think there is a spreadsheet with the differences. Basically, each DB2 LUW version comes with new features. To find out the relevant new features for each DB2 version in the SAP context, have a look at the following SAP notes:
Note 1351160 - DB6: Using DB2 9.7 with SAP Software
Note 1700631 - DB6: Using DB2 10.1 with SAP Applications
Note 1851853 - DB6: Using DB2 10.5 with SAP Applications
