I personally would ask the people who work with those printers, they usually know it from their mind what is printing where.
If you want to find it from customizing, then you have to analyze your settings made in OMLV print customizing. I am just talking about printing from WM.
for other documents you can do an analysis on table NAST. field LDEST has the printer, list all messages and see if you can identify the documents from there
