What is the best method of converting Unicode to Ascii in our mappings. Currently we receive Unicode information from our SRM system but we need to convert the characters to Ascii before sending to another system via SOAP.

You cannot set the codepage in mapping.
Check note 856597 to see how to set the codepage for SOAP messages.
