I don't know of any limitation as to number of applications.
You might want to create several applications using the same component if the interface view, plug or parameters differ.
Another situation is if you want to target two types of users and for example hide some screen fields for one type of users. A simple way to do this is through customizing the application by running it in admin mode (shift+F8). You would then need two applications - one for each type of users.
The same can also be achieved by creating several application configurations and component configurations and I would normally prefer that method.
