I want to know the amount and quantity of goods dispatched through project but sales not booked. Please anyone can help me out.

What do you mean by dispatched through project? Do you mean, Delivered from Project?
I would suggest you to reframe your query in a way that is understood by everyone here.

Through CN41 you can See the sales documents for range of Projects.
select the sales document and select display object
you go to the display sales order screen from here you click Display Document fow
from this you can check whether the goods are delivered or still to be invoiced.
