I am new to customer hierarchy in SAP, had few basic questions.
What do you mean by SAP customer hierarchy level 2 customer?
and should all the customers in SAP be assigned to customer hierarchy mandatorily?

Level 2 customer is actually a Customer where you can have all types of activity like sales, accounting etc unlike Hierarchy Node (considered as a Level one).

This is simply not.It is totally depends on the sales business process of your Company.
