Do you mean you want to change item category in the scheduling agreement? If so, then make the quantity of the line item similar to the subsequent document and for balance add a new line and change the item category.
I don't think it is possible, when subsequent document is created.
Note that the requirement type is determined based on the item category, MRP type and strategy type (in the material master) settings in t.code OVZI. So to change the requirement type either one of the parameter needs to be changed as per the setting in OVZI. If there is no subsequent document exists for an item, then using the above parameters you can change.
