Dear Kishore,
<b>Sales document types</b> signify different sales processes of doing business. Just like how an inquiry is different from a sales order or a quotation. Also sales documents are used in identifying different functionalities like a credit check, pricing determination, <b>Item categories</b> which influence the total behaviour of the item across the sales cycle.
<b>Schedule line category</b> signifies the availability of an item on a given date. Like in our project one requirement is that the sales order are made to go for a credit block by an user exit. Till the time the document is not released through VKM3, the schedule line date is not confirmed. So, only after credit release would the item be confirmed with a schedule line.
Our role in <b>sales doc type</b> and <b>item cat</b> is to configure the clients business processes like we do in t.code <b>VOV4</b> where we determine the item category by the sales document type and attribute a behaviour to the item, the one which the client is looking for.
<b>VK11</b> is for condition record maintainence by condition type whereas <b>VK31</b> is for mass maintenance of condition types.

1. Sales Doc Type:
In business we will do different type of sales. these different types of sales we do are mapped in sap using Sales DOcument type.
2. Schedule Lines:
IN sales when we create a order we also need to supply material to customer. We in general can find out from stores and tell about when we can supply materail , but how system can do it - hence we need to have some setup using which system can plan and tell when it would be able to supply materail and also plan for materails manufacturing/ procurement
3.Role of Sales odc type & Item category
As covered in point 1, sales doc determines the type of sale. But we know the type of sales but what material is to be supplied, data needs to be maintained seperately. also how this material should behave in sales is what is determined by item category. IN shot Item category controls the behaviour of Item in Sales transactions.
4. Vk11 / Vk31
Vk11 is the condition Master where we can maintain data for each condition indivudually.This Tcode was exiting from older versions of SAP
VK31 is for Mass maintainenance of condition records. you can use to create new condition records with reference, copy, change etc. this is a new Tcode available from 4.5 V of SAP.

The purpose to differentiate different sales document type is to map different business processes like Inquiries, Quotation, and Sales Order. Each Sales Document will behave in a unique way (like relevant for delivery, relevant for billing) as per the settings in IMG.

Can you be more specific regarding this question do you mean client as a customer or ??.

As per the client requirement make the customisation to achieve the required business functionality thru the system. Sales Document Type one can do following settings define the delivery document type, Billing Document Type, Propose required delivery date, Document Pricing Procedure (For Pricing) etc.
Item Category is to identify whether the material is relevant for pricing, relevant for billing, relevant for delivery, whether material value/text material etc .
diff b/n condition type vk11 and vk31
In VK11 we can create condition records for ALL the condition types (even including customised condition types) with application as V (SD).
In VK31 we can create ONLY the SAP Standard condition record where in can access discounts, prices, taxes and freights.

1) Sales dox are differntiated due to the different scenarios we face, like inquiry, quotation etc.
2) there is no client requirement in schedule line cat. its requirement
3)In every project its required as per the scenario. Like if one is selling services then item cate will be not relevant for delivery like that.
4)VK11 is used to create condition records for pri pro condition types, n vk31 is used for service agreements

1. The purpose to differentiate sales document type is based on the different requirements by the client. For example in or we can have different order types based on the requirements which we can configure at the controls of order documents i.e., VOV8.
And also based different sales processes we have to use different document types.
2. Scheduline category is determined by the itemcategory of the document type and the mrp type. By the scheduline line category you will know not only the delivered quantity, dates but also the requirement type of the material for which it is used.
3. Based on the requirements given by the client , you might have to go for configuration and customization in document types and also in item category .We do the settings in the item category definingVOV7.
4. VK11 is to maintain condition records individually for a condition type.
VK31 is to maintain condition records at a mass level.
We have to maintain condition records for condition types discounts, taxes at VK11, whereas we can maintain the both at the same time in VK31.
