Is there a report that lists all the RFC connections in a readable format? (Not like SM59 where you have to expand type, double click connection name to get info)
I want all in one go! Name, type, destination etc. etc. etc.

You can retrieve all rfs destintaion from the table RFCDES.
So it should be somthing like
data: rfcdest type table of char32.
select rfcdest from rfcdes into table rfcdest where rfcdest like 'Z%'.
