the SAP notes 618868 (FAQ: Oracle Performance), 619188 (FAQ: Oracle Wait Events) and 766349 (FAQ: Oracle SQL Optimization) are usually a good starting point to understand the most important performance aspects of Oracle / SAP environments.

Tuning depends on lt of things your platform work load and environment Etc.
As you requested docs pdfs.no you cant get specific doc for specific scenarios.Its all depends on situation.
I suggest you go through Oracle Docs in metalink.And for SAP in service market place.You will get recmd docs and best practices.I guess this will help you to start with tuning.
To tune u shd be expert in Arch and OS Admin.There are lot of things like memory , OS and SQL Tuning Etc.U need to have more exp in perticular field.
You will get some good docs and scenario in google also.
